Manual harvest. In some vintages we harvest in different step, according to the maturation of the grape.
IN THE CELLAR
Cold maceration with skins for 72 hours on average, successive pressing. Fermentation temperature controlled at 17°C. Malolactic fermentation does not occur.

yellow gold, fruity at the nose, with exotic references, honey accent at the end, at the palate is fresh, mineral with a good grade of acidity that gives longevity to the indigenous white from Langhe.

Vineyards
Vineyards remember, like our body, they carry the signs of the past and they tell the history of viticolture, the changes in climate, the life of different generations. Every pruning, every binding, the distance between one vine and the other, the complete picture of a row, of its headland, a curved bark: every detail brings us back to something that happened and left a mark.
Vineyards teach patience. They strive for balance and they reach it. For as much as we can do or not do, it's only a matter of time. I learnt an alternative way to work in the vineyard, with less chemical violence and closer to the plants.
My vineyards will tell about a change that started in 2009, when we started thinking and acting with an organic approach to the vineyard (officially certified in 2013). In 2015 out evolution went even further, with biodynamic practices applied to all cultivations we manage.
Land
The winery is located on top of the Lirano hills, 400 meters above sea level, on the border with the Barolo zone. The soil, from which the richness, power and elegance of our tannins derive, it's typical of Serralunga: calcareous and rich of clay, with the presence of marles. The winery extends on 15 hectars of vineyards, 6 hectars of woodlands, 6 hectars of nut trees and 1 hectar dedicated to alternative crops.
