CHABLIS Premier Cru Vieilles Vignes

A few words on the appellation...


Situated in the vineyards of Chablis, this appellation of the same name,
Chablis, only makes white wines. The vines, planted on calcareous
soils, give it the mineral and iodised notes that are so typical of it. Here,
Chablis is a Premier Cru, the guarantee of uncompromising quality.


100% Chardonnay


After being harvested by hand, the grapes are destalked and then
pressed ready for vinification in new 500 litre oak barrels. The wines are
then aged for 6 to 12 months in barrels that have seen two previous
vintages.


Its clear, pale gold robe, reveals a fresh, lively and mineral nose: flint,
green apple and lemon, with lime, mint and acacia notes. Age makes it
a little more golden and spicy. On the palate, it has a beautiful attack
and aromas that keep their freshness. It is a Chablis with a long finish;
it is dry, and perfectly elegant.


This Chablis Premier Cru Vieilles Vignes is the ideal accompaniment
for fish or poultry terrines as well as for grilled or poached fish. It is
perfect with asparagus and it is also delicious with exotic cuisine,
curries and tandoori dishes of all kinds. A wonderful aperitif, it also
pairs magnificently with such cheeses as goat, Beaufort, Comté and
Emmental.


Best served between 10° and 11°C. Can be kept for 3 to 5 years, but no
longer to retain all its freshness.
